Watercress and Caramelized Onion Crostini

The light and nutrient-packed watercress pairs well with the rich caramelized onions and goat cheese on top of a crunchy crostini; an easy but tasty appetizer that will make any cook look like a chef.

INGREDIENTS
DIRECTIONS
  1. Preheat oven to 375°F. Brush bread slices with melted butter and rub with cut sides of garlic cloves. Arrange on a baking sheet and bake until crisp and toasted, 8-10 minutes, turning once. Remove from oven and rub with garlic cloves again. Set aside.
  2. Meanwhile, in large non-stick skillet over medium heat, melt two tablespoons butter. Add onions, sugar, salt and pepper and cook until onions are golden and caramelized, 25-30 minutes, stirring occasionally. Cool slightly.
  3. Top toast slices with fig jam, cheese, onion and watercress. Drizzle with balsamic glaze.
