Seasoned Breadcrumbs

Combine all ingredients, and mix well.

Crispy Eggplant Salad

1. Set up three containers, one each with flour, eggs and breadcrumbs.
2. Coat eggplant in flour, then egg, then breadcrumbs.
3. Heat oil in skillet over medium heat, and fry eggplant until golden brown on both sides.
4. Beginning with eggplant, layer ingredients in following order: eggplant, tomato, mozzarella, roasted pepper and arugula. Repeat, ending with a third slice of eggplant topped with arugula.
5. Drizzle balsamic glaze over the top.
