Tofu Watercress Caesar Salad

This watercress vegetarian dish is simple, but flavorful! Full of nutrients, it can be the star of your meal or the perfect side dish.

  1. To roast garlic, heat the oven to 350 degrees. Place garlic on a piece of aluminum foil, drizzle each head of garlic with 1 tsp olive oil, and season with salt and pepper. Wrap foil around garlic loosely to form a parcel. Roast in oven until soft, 30-40 min.
  2. In a blender, buzz together roasted garlic, sesame oil, liquid aminos, 2 tb nutritional yeast, and tofu, puree until smooth. Drizzle in EVOO and emulsify, season with salt and pepper, and check for seasoning.  Using a large bowl, toss watercress with dressing, and garnish with sesame seeds and nutritional yeast. Serve and Enjoy!

If you would like to add protein: Season 2 boneless skinless chicken breasts with salt, pepper, and garlic powder. Sauté or grill until cooked thru, about 10-12 min, and slice to put on top of your salad.
