Watercress Salad with Honey Sautéed Apples and Almonds

  1. Core and dice the apple. Add to a skillet or sauté pan with the butter and sauté on medium high heat, stirring often, for 3 minutes. Add the honey and continue stirring and sautéing for an additional minute. Remove from the heat to cool.
  2. Make the dressing by whisking together the olive oil, lemon juice and mustard until fully incorporated. Season with salt and pepper to taste.
  3. To assemble, toss the watercress and apples in with the dressing and top with the almonds.
