Watercress Fried Rice

Dress up fried rice with watercress and ginger for a fragrant and delicious take on this traditional Asian dish.

  1. In a small bowl, lightly beat egg. In a large non-stick skillet over medium-high heat, cook egg until cooked through; set aside.
  2.  In the same skillet, heat 1 tablespoon of the toasted sesame oil and cook scallions and ginger, stirring until fragrant, about 2 minutes. Stir in peas and carrots and cook until tender and heated through, about 3 minutes.
  3.  Add cooked rice, soy sauce and remaining sesame oil, stirring until heated through. Remove from heat and stir in watercress. Garnish with sesame seeds.
