For the Champagne Vinaigrette
  1. Place all ingredients except oil into a blender and mix for about 30 seconds.
  2. While the blender is still running, slowly add the oil in a
  3. steady stream to emulsify.
  4. Put dressing in sealable jar or bottle in the
  5. refrigerator until ready to use.
  6. Prepare salad, shake dressing well, pour, and lightly toss. Serve immediately.
