Chilled Watercress Avocado Soup

When it doesn’t sound appetizing to eat a salad, sip on earth’s bounty in a chilled soup! A creamy watercress and avocado soup with a hint of spice is a delicious way to enjoy a dose of vegetables and fruit.

  1. In a blender puree watercress leave, avocado, coconut water, jalapeño, lime juice, scallion, and salt until smooth and creamy.
  2. Transfer evenly amongst two serving bowls and garnish with sour cream, sliced scallions, and watercress sprigs, if desired.
