Restaurant Trends for 2024

Nutrition Is In.

Improving physical health has regained its number one spot for resolutioners in 2024, after having traded places with mental health-related goals over the recent years. Consumers are doing more research than ever about what they eat. They are becoming increasingly aware that a nutrient-dense diet not only correlates to a longer life, but a better-quality one.

As people have become more health-conscious, plant-based foods have become more mainstream and accessible. Between 2017 and 2019, the plant-based foods market increased 29% in the U.S. and global retail sales of plant-based meat have more than doubled since 2018. This increase in demand has us seeing plant-based options in popular fast-food chains like Burger King, Chipotle, and Starbucks.

Restaurants are also embracing plant-based ingredients like watercress to create delicious and nutritional menu options, like The New York Times’ predicted Dish of the Year: soup.

Soups are one of the best ways to obtain nutritional content from plant-based ingredients. Unlike alternative cooking methods such as baking, steaming, and sauteing, where more water-soluble vitamins and minerals are cooked out, boiling allows for nutrients to be distributed into the soup’s base and retained in the final dish. Because of this, our Watercress Tomato Soup with Bacon and Gingered Watercress Chicken Soup contain over 50 essential nutrients.

In addition to its impressive nutritional profile, the distinctive, peppery flavor of watercress has us anticipating seeing it on more menus and grocery lists this year. View our recipes for more healthy, flavorful inspiration.
