Garlic Sauteed Water Spinach
This nutritious and delicious water spinach dish is perfect on it’s own or is so versatile you can pair it with any protein for a filling meal.

- Chop the tip of the stem and toss. Then continue cutting the long stems in 2 inch sections. The leaves can be left whole, or if you prefer them to be exceptionally large, you can cut them in half to make them easier to eat.
- Since the stems and leaves have different cooking times, with stems taking longer to cook, it’s helpful to separate them.
- Mince garlic cloves.
- Heat olive oil in large skillet over medium-high heat. Add the minced garlic and sauté for 30 seconds. Ensuring the garlic doesn’t overcook.
- Start adding the water spinach stems and add the leaves later in the cooking process.
- Use tongs to flip the spinach so all sides are coated in oil and garlic.
- Then cover the pan, let it steam for a minute or so, then stir again. After a few minutes it should be completely wilted.
- Season and serve. Sprinkle with salt and pepper, then serve it up with a number tasty options!
