- Preheat oven to 325.
- Combine white rice, chopped watercress, rice vinegar, spicy mayo, and seasonings in a large bowl.

- Grease glass pan with cooking oil.
- Spread rice mixture evenly across bottom of pan.
- Add imitation crab mixture on top in an even layer.
