- In a large pot, heat oil on medium heat.
- Once oil is hot, add pork. Saute for about 5 minutes or until all sides are golden.
- Add ginger, garlic, and mushrooms. Saute for another 1 – 2 minutes.
- Add chicken broth. Let cook for about 10 minutes until pork is cooked through and mushrooms are tender.
- Add scallions and watercress. Stir and let cook for 1 – 2 minutes or until watercress is slightly wilted.
