Filipino Pancit with Watercress

DIRECTIONS
- Cut carrots and onion into thin, matchstick-like pieces.
- Cut cabbage into shreds.
- Chop watercress.
- Cut chicken into bite-size pieces.
- In a large wok, cook carrots in E.V.O.O. until slightly roasted, and then remove them from the wok.
- In the same large wok, cook onions in E.V.O.O. until they’re translucent.
- Add in chicken.
- Add a pinch of salt and pepper.
- Add 6 tbsp. soy sauce and 6 tbsp. oyster sauce.
- Continue cooking until meat is completely cooked or sauce is reduced.
- Add 4 cups chicken broth into the wok and bring to a boil.
- Take out chicken and onions with slotted spoon and set aside.
- Add in rice stick noodles.
- With a large spoon, coat noodles in broth until completely coated in sauce. (If there is not enough chicken broth for all of the noodles, add small amounts of water until there is enough.)
- Add carrots and cabbage.
- Add chicken back in.
- Top with fresh watercress.
- Mix well.
