Eggs in Purgatory with Spinach & Bacon
Heat olive oil in large cast iron skillet over medium heat. Add smoked applewood bacon, and cook until bacon begins to crisp. Add onions, and cook until soft, approximately 10 minutes. Add chopped garlic and red pepper flakes, and cook few minutes more. Add grated tomato, and cook until tomatoes have released their juice. Then add spinach and tomato juice, and allow spinach to cook down. Season with salt and pepper. Using spoon, create 4 shallow wells in spinach and tomato mixture, crack each egg, and place them in wells. Season, and sprinkle each egg with Parmesan cheese. Reduce heat, cover pan with lid, and cook covered for 3 minutes. Remove from heat, and garnish with red pepper flakes and extra virgin olive oil.
